Ingredients

For the “shrimp”:

4 large king oyster mushrooms

v

2 tbsp vegan fish sauce

s

1 tbsp soy sauce, or tamari for a GF version

1 juice of lemon

For the coating:

a

½ cup all purpose flour, or GF flour mix

c

½ cup cornstarch

b

½ tsp baking powder

s

½ tsp salt

g

½ tsp garlic powder

v

⅓ - ½ cup very cold water

Neutral oil, for frying

For the bang bang sauce:

⅓ cup vegan mayo

s

3 tbsp sweet chili sauce

s

2 tsp sriracha

s

½ tsp salt

2 green onions, finely chopped

Directions

For the “shrimp”:

Slice the stems of the mushrooms into 1–2 cm thick discs, then use a small knife to carve them into shrimp-like shapes.

Place them in a container, add the vegan fish sauce, soy sauce, and lemon juice, and let sit for about 20 minutes.

For the coating:

In a bowl, whisk together the flour, cornstarch, baking powder, salt, and garlic powder.

Scoop about ½ cup of this flour mixture into a separate bowl. To that separate bowl, slowly whisk in the cold water until you have a smooth, light batter that drips easily off a spoon. The original bowl will remain your dry coating mix.

Heat a few inches of oil in a deep pan to 350°F (175°C).

Working in batches, dip each mushroom piece into the dry flour mix, then into the wet batter, then back into the dry flour mix, pressing firmly so it sticks.

Fry until golden and crispy, about 2–3 minutes per side, and transfer to a rack or paper towels to drain.

For the bang bang sauce:

Mix the mayo, sweet chili sauce, sriracha, salt, and green onions in a bowl until smooth.

Add the fried mushrooms and toss gently to coat.

Serve immediately while hot and crisp. Enjoy!
