1. Thinly slice the lettuce and mince the pickles. Set aside.

2. In a small bowl, make the sauce by combining light mayo, no-sugar-added ketchup, mustard, and the minced pickles.

3. Place a low-carb tortilla on a flat surface. Add 1/4 lb extra-lean ground beef and spread it evenly across the entire tortilla.

4. Season the beef evenly with salt and pepper.

5. Heat a pan over medium-high heat and lightly coat with spray oil.

6. Place the tortilla beef-side down into the hot pan. Press firmly to ensure good contact and maximum caramelization.

7. Cook for a few minutes until the beef is nicely browned, then flip the taco over.

8. Add ½ slice of American cheese or 1 slice of low-fat American cheese on top of the beef.
