Ingredients

1 tbsp light mayo

1 tbsp no sugar added ketchup

3 slices pickles(minced)

1 low carb flour tortilla

¼ lbs lean ground beef

1 slice reduce fat American cheese

Directions

1. Thinly slice the lettuce and mince the pickles. Set aside.

2. In a small bowl, make the sauce by combining light mayo, no-sugar-added ketchup, mustard, and the minced pickles.

3. Place a low-carb tortilla on a flat surface. Add 1/4 lb extra-lean ground beef and spread it evenly across the entire tortilla.

4. Season the beef evenly with salt and pepper.

5. Heat a pan over medium-high heat and lightly coat with spray oil.

6. Place the tortilla beef-side down into the hot pan. Press firmly to ensure good contact and maximum caramelization.

7. Cook for a few minutes until the beef is nicely browned, then flip the taco over.

8. Add ½ slice of American cheese or 1 slice of low-fat American cheese on top of the beef.

9. Continue cooking until the tortilla is crisp and the cheese is fully melted.

10. Remove from the pan and plate.

11. Top with the sauce and a handful of shredded lettuce.
