Notes

Three Cup Chicken, or “San Bei Ji” (三杯鸡) in Mandarin is a popular standard dish in Chinese and Taiwanese cuisine. Typically, the dish uses 3 cups of each for the sauce: soy sauce, sesame oil, and rice wine, hence the name. Substitutions and notes: - Dry basil: Use fresh basil instead. You can use 1/4 cup to 1/2 cup of dry basil, and I recommend 1/2 cup if using fresh. I used 1/2 cup basil in the photo of this, which makes it VERY basil-y. Use less if you're not into that. Dry basil also has a tendency to get into your teeth! - 5 tbsp Shaoxing cooking wine: feel free to substitute for 2.5 tbsp water and 2.5 tbsp vinegar. Or use 5 tbsp rice wine. COST ESTIMATES in Toronto: Extra firm tofu (3 packs of 350g): Approximately $2.50 per pack, totaling around $7.50.​ Dried basil (1/4 to 1/2 cup): A 20g jar costs about $3.00; you'll need approximately 10g to 20g, so around $1.50 to $3.00.​ Soy sauce (5 tbsp): A 500ml bottle costs about $4.00; 5 tablespoons (approximately 75ml) would be around $0.60.​ Sugar (3 tbsp): A 2kg bag costs about $2.50; 3 tablespoons (approximately 40g) would be around $0.05.​ Sesame oil (3 tbsp): A 250ml bottle costs about $6.00; 3 tablespoons (approximately 45ml) would be around $1.08.​ Shaoxing cooking wine (5 tbsp): A 750ml bottle costs about $10.00; 5 tablespoons (approximately 75ml) would be around $1.00.​ Ginger (6 slices): Fresh ginger costs about $4.00 per pound; 6 slices (approximately 30g) would be around $0.25.​ Garlic (8 cloves): A bulb of garlic (approximately 10 cloves) costs about $0.50; 8 cloves would be around $0.40.​ Total estimated cost: Approximately $12.38 to $13.88.
