For the tarts:

2 apples, thinly sliced (Granny Smith or Honeycrisp work well)

5 tbsp agave syrup, (or dates / maple syrup)

1 sheet vegan puff pastry, thawed (regular or gluten free)

2 tbsp plant milk

1 tbsp agave syrup, (or dates / maple syrup)

Directions

Peel the apples and slice them into even sections. Remove the cores and cut each section into thin slices. Arrange the slices into neat fan shapes.

Line a baking tray with parchment paper. Drizzle about 1 tsp agave syrup for each tart. Lay the apple slices neatly on top of each drizzle, then drizzle a little more syrup over the apples.

Cut the puff pastry into 10 squares large enough to cover each apple pile. Place a square of pastry over the apples, pressing down lightly around the edges to seal.

Mix together plant milk and agave syrup to make vegan egg wash. Brush each pastry square with the egg wash.

Bake in a preheated oven at 390°F (200°C) for 12–15 minutes, or until golden, puffy, and crisp.

Remove from the oven and let them cool for 5 minutes before carefully flipping them upside down so the apples are on top.

Serve warm with a scoop of vegan vanilla ice cream. Enjoy!
